There are fleeting moment in life where the loss of a loved one from this world hits you. The greatest way for me to celebrate that life is by doing something they did, or you learned from them.

For me, the way to connect with my late mother is through cooking. I would sit in the kitchen and watch her cook and bake for our neighbors, family and friends. The smell of fresh baked cinnamon bread still swirls around in my memory.

One of my mothers classic desserts, that was not only made but requested by those she knew was called a Trifle. It is a mix of homemade whipped cream, berries and vanilla cake. It was my sisters birthday, so I figured why not bring my moms memory into a celebration of my sisters life. Seeing the my sister is primarily gluten free I put my own little spin on it. RECIPE BELOW:

1 box of gluten free cake mix.

2 Tablespoons of Vanilla (dont use the imitation crap, Blech!)

-Follow the directions of the cake mix. Its much cheaper and economical to buy a cake mix then to concoct your own. Bake the cake per recommendations. Let cool. Cut cake in pan into 1 squares.

(Have you ever noticed with gluten free items they sometimes - well most times - come out dry and gritty, well my secret is to add 1 1/2 to 2 times the amount of liquid in the cake. This will create a lighter, fluffier less dense cake. People who aren't gluten free won't even know the difference)

Homemade Whipped Cream

2 cups of whipping cream

2 tablespoons of vanilla

2 tablespoons of sugar (or more if you like it sweeter..I prefer just a touch of sweetness)

Berries

For the berries you can choose anything, raspberries, blueberries, blackberries, strawberries, etc.

I chose to go with 3 cups of strawberries and 2 cups of blueberries.

VERY IMPORTANT: Wash the fruit, get all that residue off.

I cut the tops off the strawberries, then cut them in 4 or 5 pieces. Once you are done cutting the strawberries through them in a bowl, coat with a teaspoon of sugar the juices will react and create just a touch of sweetness.

HERE COMES THE FUN PART!

Layering the jars

Take a mason jar, add a dollop of whipped cream at the bottom. Take 7 to 8 of your 1 pieces of cake and layer in the bottom. (You may have to cut, or tear these in half)

Put a generous layer of whipped cream over the cake. Add a handful of strawberries, a handful of blueberries and another layer of whipped cream. Repeat this process one more time, and throw a few blueberries on top.

Seal these bad boys. Put them in the fridge and take them to a picnic, dinner, lunch or day trip.
